Hand-picked fruit with 20% whole bunches, on skins 15 days in open top fermenters, pressed to seasoned French puncheons and hogsheads for 18 months. While this shines the spotlight on the fruit, there's certainly oak flavours and tannin seeping through to the wine but just the right amount. Also in the mix are blackberry essence, plum compote, molasses and savoury, persimmon-like tannins.
